Natural ash manna, a type of cannolo, is formed by the dripping of natural sap along the bark of the ash tree, taking on a stalactite-like appearance.

This is the most valuable part as it is completely free of impurities. The sap flows along a nylon thread tied to a small steel plate placed under the incision, allowing for harvesting every two days, resulting in longer cannoli that are almost completely free of impurities.

Manna is a pharmacologically important substance because it is used to treat various pathologies . It is primarily used to combat constipation and as a purgative with no side effects, both in childhood and adulthood (LENTINI & al., 1983).

Manna is also recommended for repelling intestinal parasites.

In moderate doses it stimulates the secretion of the bile ducts.

Manna can be used as a natural sweetener and since its main component is D-Mannitol, a colorless, odorless, sugary-tasting hexavalent alcohol also known as "Manna Sugar", a substance that falls into the category of sugar alcohols, it may be well tolerated by diabetics.
